Festive Thumbprint Cookies
- 1 package sugar cookie mix
- 1 stick unsalted butter, softened
- 1 teaspoon vanilla paste
- 2 eggs
- various holiday sprinkles
- buttercream frosting
- Preheat oven to 375 degrees and line a baking sheet with parchment paper.
- Using a hand mixer, beat together the cookie mix, butter, eggs and vanilla paste.
- Make quarter sized balls and roll in the sprinkles to cover completely.
- Place on the baking sheet. Use a 1/2 teaspoon to make an indention in the center of each ball.
- Bake to 8-11 minutes or until lightly golden brown.
- Allow the cookies to cool completely before adding frosting.
- Pipe the frosting into each of the indentions.
- Chill for 30 minutes before serving. Store in an airtight container
**To make Lemon Thumbprints: just add the zest of one lemon to the dough when mixing. Fill each indention with lemon curd and then dust with powdered sugar!
