Chocolate Peppermint Chewies (GF)

Chocolate Peppermint Chewies (GF)

  • 3 egg whites
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon chocolate extract
  • 3 cups powdered sugar
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1 cup chocolate chips melted
  • crushed peppermint candies
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Spray with nonstick cooking spray.
  3. In a large bowl, beat together the egg whites, vanilla and chocolate extract till soft peaks form.
  4. Sift together the powdered sugar, cocoa and salt.
  5. Fold in the dry ingredients into the whipped egg whites and continue adding till it is completely combined.
  6. Stir in the mini chocolate chips.
  7. Using a cookie scoop place scoops of dough onto the parchment paper and leave 3 inched between cookies.
  8. Bake for 18 minutes and immediately remove from the oven to cool.
  9. Melt the chocolate in a microwave safe dish.
  10. Once the cookies are cool, drizzle with melted chocolate and then sprinkle with peppermint candies.
