Curry Stuffed Acorn Squash

  • 2 acorn squash, cut in half lengthwise
  • 1 box couscous
  • 1 can coconut milk
  • 1 teaspoon curry powder
  • 1 apple, chopped
  • 1/4 cup pecans, chopped
  • 1 package turkey smoked sausage
  • 1/2 onion, chopped
  • 2 celery stalks, chopped
  1. Preheat oven to 425 degrees and line a baking sheet with parchment paper.
  2. Carefully cut the acorn squash lengthwise in half and using a spoon remove the seeds.
  3. Place cut side down on the baking sheet and cook for 30-45 minutes in the oven.
  4. While the squash is cooking, sauté the onions, celery and smoked sausage in 2 tablespoons olive oil till sausage is browned.
  5. To prepare the couscous, simply put 2 cups coconut milk in a sauté pan and bring to a boil.
  6. Add in the dry couscous and cover for 5 minutes.
  7. Fluff with a fork. Stir the couscous into the sausage mixture and then stuff into the cooked acorn squash. Serve!
