Curry Stuffed Acorn Squash
- 2 acorn squash, cut in half lengthwise
- 1 box couscous
- 1 can coconut milk
- 1 teaspoon curry powder
- 1 apple, chopped
- 1/4 cup pecans, chopped
- 1 package turkey smoked sausage
- 1/2 onion, chopped
- 2 celery stalks, chopped
- Preheat oven to 425 degrees and line a baking sheet with parchment paper.
- Carefully cut the acorn squash lengthwise in half and using a spoon remove the seeds.
- Place cut side down on the baking sheet and cook for 30-45 minutes in the oven.
- While the squash is cooking, sauté the onions, celery and smoked sausage in 2 tablespoons olive oil till sausage is browned.
- To prepare the couscous, simply put 2 cups coconut milk in a sauté pan and bring to a boil.
- Add in the dry couscous and cover for 5 minutes.
- Fluff with a fork. Stir the couscous into the sausage mixture and then stuff into the cooked acorn squash. Serve!
