Baby Zucchini Saute

  • 1 pound baby zucchini, cut in half lengthwise
  • 2 tablespoon olive oil
  • 2 cloves of garlic, grated
  • 1 teaspoon fresh mint, chopped
  • Zest of one lemon
  • Balsamic glaze
  1. In a large saute pan, heat the olive oil to medium high heat and then add the garlic and mint.
  2. Cook for 2 minutes and then add the zucchini.
  3. Cook till tender. (not mushy)
  4. Remove from the zucchini from the pan and drizzle with balsamic glaze.
