Savory Autumn Puffs

  • 1/2 pound ground sausage (hot or mild)
  • 1 cup sliced mushrooms
  • 1/2 onion, diced
  • 1 cup butternut squash, cubed
  • 2 teaspoon herbs de provence
  • 6 puff pastry cups, baked according to package instructions
  1. In a large saute pan cook the ground sausage till lightly browned.
  2. Add in the mushrooms, onion, butternut squash and herbs.
  3. Cook over medium heat and then cover for 10 minutes.
  4. Stir occasionally, but place the lid back on.
  5. Remove the warmed vegetable mixture from the stove top.
  6. Take the top off the puff and add heaping spoonfuls of the meat/veggie mixture into the cup and sprinkle with a little parmesan cheese.
  7. Enjoy with a green salad.
