Apple Couscous Salad

  • 1 package couscous, prepared according to package instructions
  • 1 apple, finely chopped
  • 1 shallot, diced
  • 2 tablespoons dried cherries, chopped
  • 1/4 cup apricots, diced
  • 3 tablespoons flat leaf parsley, chopped
  • 1/4 cup toasted sliced almonds
  • 1/3 cup apple cider vinegar
  • 1/4 cup agave nectar or honey
  • 1/4 cup olive oil
  • Salt and pepper
  1. Place the cooled couscous in a large bowl. Add in all of the fresh ingredients.
  2. To make the dressing: Whisk together the apple cider vinegar, agave nectar, olive oil and salt and pepper.
  3. Pour over the couscous and toss together.
  4. Chill for 4 hours before serving.
