Breakfast Apple Cobbler

  • 2 apples, seeded and sliced thin
  • 1/4 cup brown sugar
  • 2 tablespoons butter
  • 1 teaspoon Nielsen Massey vanilla paste
  • 1 teaspoon pumpkin pie spice
  • 1 cup granola (your choice)
  1. In a medium sized skillet, sauté the apples in butter, brown sugar, vanilla paste and pumpkin pie spice till the apples are soft.
  2. Add the warm apple mixture to small carafe or mini cast iron skillet.
  3. Sprinkle the granola over the top of the apples and bake in the oven for 20 minutes or until bubbly.
  4. Serve with a small scoop of vanilla bean ice cream or a drizzle of fresh whipping cream.
