Fresh Corn and Shrimp Chowder
- 1 yellow onion, diced
- 3 celery stalks, diced
- 3 red potatoes, cut into 1 inch cubes
- 4 slices of bacon, cut thin
- Fresh thyme
- 1 pound shrimp, cleaned and deveined, cut into pieces
- 4 cups chicken broth
- 2 cups half and half
- Salt and pepper
- In a large stock pot sauté the onion, celery and bacon together with the fresh thyme.
- Once the bacon is lightly browned, add the chicken broth and potatoes. Cook till the potatoes are tender.
- Add in the shrimp and half and half. Cook over medium heat until the shrimp are cooked through. Add salt and pepper as needed.
