Kale and Sausage Soup
1 pound turkey Italian sausage
1 cup onion, chopped
1 cup sweet potato, cubed
2 cans cannellini beans, drained
1 (14.5 ounce) fire roasted tomatoes
1/2 cup carrots, shredded
3 cups chicken broth
3 cups water
2 sprigs fresh thyme
2 cups kale, chopped
salt and pepper
Parmesan cheese
In a large stockpot, brown the turkey sausage and onion till browned. Add the chicken broth and water as well as the sweet potatoes, cannellini beans, fire roasted tomatoes, carrots, thyme, salt and pepper. Allow the stoup to cook covered for 30 minutes. Add in the kale and continue to cook covered for 15 minutes. Serve with crunchy bread and a sprinkling of fresh Parmesan cheese.
