Pulled Chicken Tostada with Black Bean Refried Beans
1 package tostada shells
1 rotisserie chicken, meat pulled from chicken
2 cans black beans, drained
1/2 onion, chopped
2 cloves garlic, chopped
2 pieces bacon, chopped
1 package southwest chopped salad mix, prepared according to package instructions refrigerated salsa sour cream
To make the refried beans: place the onions, garlic, and bacon in a skillet and cook till tender. Add in the beans and cook till warmed and then using a potato masher mash the beans in the pan. Add water or broth to thin the beans so they are easily spread on the tostada. To make the tostada: Spread beans on the top of the shell, add shredded chicken, salad, salsa and sour cream.
