Quick Green Chili Bean Soup
1 onion, diced
1 red pepper, diced
1 yellow pepper, diced
1 green pepper, diced
1 cup chili verde salsa
4 cups chicken broth
3 cans black beans, drained and rinsed
1 tablespoon chili seasoning
1 teaspoon garlic, chopped
ADD:
Salt and pepper, to taste
Sour cream
Cilantro
In a stockpot sauté the onion and peppers till tender. Add the garlic, salsa, chicken broth, black beans and seasonings. Cook till it comes to a simmer. Using an immersion blender, blend the soup till it is smooth to the consistency you like. Continue to cook for 20 minutes. Serve with a drizzle of sour cream and cilantro.
