Creamy Spinach Artichoke Chicken
4-6 boneless skinless chicken breasts
¾ cup Parmesan cheese
1 container cream cheese, softened
2 cups fresh spinach, chopped
2 cups artichoke hearts, chopped
1 cup shredded Italian cheese blend
ADD:
salt and pepper to taste
1 teaspoon minced garlic
1/2 chopped onion
1/2 cup chicken broth
In a slow cooker bowl, pour the chicken broth in the bottom and then place the chicken breasts. Season with salt and pepper. Add the chopped artichoke hearts, garlic, and onion. Cook on HIGH for 4 hours. Remove the chicken breasts and place on a platter. Add the spinach, cream cheese, 1 cup Italian cheese blend and mayonnaise. Stir till cheese is melted and then spoon over the top of the chicken breasts and serve with wild rice.
