Chive Bacon and Cheese Muffins
2 tablespoons vegetable oil
1/4 cup minced fresh chives
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar or honey
2 eggs
1 cup buttermilk
ADD
1 cup cheddar cheese, shredded
2 green onions, chopped
1/4 cup bacon bits
1 stick butter, melted
1/2 teaspoon garlic powder
Preheat oven to 350. Place muffin liners in a muffin tin and set aside. In a medium sized bowl mix together the flour, baking powder, salt and sugar. Pour in the buttermilk and eggs. Mix well. Stir in the cheddar cheese, bacon bits and onions. Place a scoop of the batter into the muffin tins and bake for 16-18 minutes. Remove from the oven and then brush with garlic butter
