Pecan Apple Bran Muffin

½ cup oil

1 cup sugar

2 eggs

2 cups buttermilk     

4 cups Raisin Bran Crunch cereal

2 cups all-purpose flour

2 tsp. baking soda

1 tsp. salt

ADD

1 Granny Smith Apple, chopped

1 teaspoon vanilla

1 teaspoon cinnamon

1/2 cup chopped pecans

Preheat oven to 400 degrees. Line a muffin tin with muffin cups. In a medium sized mixing bowl whisk together the oil, sugar, eggs, vanilla, and buttermilk. Stir in the flour and Raisin Bran and stir till combined. Add in the apples and stir. Using a small ice cream scoop, add scoops of muffin batter to each cup and sprinkle with pecans. Bake for 16 minutes or until muffins are golden brown and cooked through. Serve warm with butter and honey.
