Sausage And Shrimp Grits
4 servings of quick grits, prepared according to package
1 cup grated smoked gouda, grated
1/2 stick butter
1 package smoked sausage, sliced
1 pound pre-cooked shrimp
1 red and yellow pepper, chopped
1 onion, chopped
1 tablespoon Cajun seasoning
1 cup white wine
In a large skillet, sauté the smoked sausage with the onions and peppers. Once the veggies are tender, add the shrimp and Cajun seasoning. Cook just till the shrimp is warmed through. Pour in the wine and cook till reduced.
To make the grits: Prepare according to the package (except sub the water for chicken broth). Stir in the butter and smoked gouda. Stir till the cheese is melted.
To serve: Place a large spoonful of the grits on a plate and then top with the sausage and shrimp mixture. Garnish with green onions.
