Fresh Rolls with Peanut Sauce
1 package (about 20) round rice paper wrappers (see note)
1 head butter lettuce, stem removed
1 bag shredded carrot
1/2 Napa cabbage, sliced thin
1 mango, cut into thin strips
1 package rice noodles, cooked according to package
1/2 cup smooth peanut butter
ADD:
1 teaspoon hoisin sauce
1 teaspoon rice wine vinegar
Set out all ingredients listed above. To prepare the wrapper, soak 1 rice paper at a time in water until it becomes soft and shake to drain. Lay rice paper out on counter top. Add the ingredients starting with lettuce and following with the rest of the ingredients in a line across the lower quarter of the paper
To roll: Fold the left and right sides of the rice paper towards the middle and roll up tightly from the bottom to the top. Lay seam side down on a plate.
To make peanut sauce: Mix together the peanut butter, hoisin sauce and rice wine vinegar.
