Southwest Queso Pasta Salad
1 pound radiatore pasta, cooked al dente (bowtie works great too!)
1 pound Velveeta, cubed
1 can diced tomatoes and peppers
1 can black beans, drained
1 small frozen corn, thawed
ADD:
1 green pepper chopped
1 red pepper, chopped
1 can green chillis
Place the cooled pasta in a large bowl. In a medium sized bowl mix together the Velveeta and diced tomatoes. Cook on high for 2 minutes in the microwave till cheese is melted. Add all of the veggies, green chilis, corn and black beans to the chilled pasta. Pour the queso over the top and toss till coated. Chill till you are ready to serve. Garnish with cilantro.
