1 whole chicken, cut up into pieces
1 cup Greek yogurt
1 teaspoon dry oregano
Juice and zest of one lemon
5 cloves garlic, chopped
1/4 cup flat leaf parsley, chopped
2 tablespoons olive oil
Preheat oven to 375 degrees or grill to medium high heat. In a small bowl, whisk together the yogurt, oregano, lemon zest/juice, garlic, parsley and oil. Place the cut up chicken in a Ziploc bag and pour the marinade over the top and seal. Then mush the marinade so that it covers all of the chicken. Put the chicken in the refrigerator and allow it to sit for at least 2 hours or overnight before cooking. To bake in the oven simply place in a 9x13 baking pan and bake for 30-40 minutes or until golden brown. To grill simply place the chicken on the grill and cook till chicken is cooked through.
