Ingredients
2/3 cup shortening (Crisco)
2/3 unsalted butter, softened
1 package lemon pudding
1 1/2 cups sugar
2 eggs
zest and juice of 1 lemon
2 teaspoons baking powder
1 teaspoon kosher salt
3 cups and 2 tablespoons all-purpose flour
Instructions
Preheat to 350°. Line a baking sheet with parchment paper or Silpat. In the bowl of an electric mixer cream together the shortening, butter, pudding mix and sugar. Add in the eggs and lemon. Mix well.
In a medium sized bowl combine the baking powder and flour. Slowly mix in the flour mixture to the butter till well combined. Using a cookie scoop, place scoops of dough on the parchment paper. Flattening slightly. Bake for 12 minutes. Remove from oven and allow to cool.
Lemon Frosting:
4 cups powdered sugar
2 Tbsp. milk
Zest and Juice of 1 lemon
2 drops yellow food coloring
Mix together all of the ingredients in a medium sized bowl. Frosting should not be runny. Add more powdered sugar as needed. Frost cookies and allow them to sit on the counter till they harden.
