Fresh Greens and Orange Salad
3 oranges, sliced into segments
1 fennel bulb, sliced thin
4 cups arugula
1/4 cup kalamata olives
1/2 red onion, sliced thin
Juice of 2 lemons
1/4 cup olive oil
salt and pepper
In a small bowl whisk together the lemon juice, olive oil and salt/pepper. In a large bowl place the arugula. Top with orange slices, fennel, red onion, and olives. Drizzle with dressing and toss. Serve!
