1 pork tenderloin

1 onion, chopped

2 apples, chopped

1/2 cup Garden Club apricot jam

salt and pepper

2 tablespoon rosemary (fresh or dried)

1/2 cup apple juice

Preheat oven to 375 degrees. In a large oven proof stock pot sauté the onion in olive oil till tender. Prepare the pork tenderloin with salt and pepper and then sear the pork in the pan on all sides. Once it is browned on all sides, add the apples to the pot as well as spread the apricot jam over the pork. Sprinkle with rosemary and then add the apple juice. Cover with foil or an oven proof lid and place in the oven to finish cooking for 45 minutes. Remove from the oven and allow the pork to rest. Place on a platter and top with juices and chutney let over in the pan.
