Vanilla Bean Whoopie Pies With Strawberry Mallo-Cream

1 cup sugar

1/2 cup vegetable shortening

1/2 cup buttermilk

1/2 cup warm water

2 large eggs

1 tsp vanilla or vanilla paste

2 3/4 cup flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt


Beat together the shortening and sugar till fluffy. Add in the eggs one at a time till incorporated. Slowly pour in the buttermilk, water, and vanilla. The batter will look lumpy and curdled. Do not fret. Once you add the flour it will come together.

Add in the baking powder, baking soda and salt. Now slowly add in the flour. Beat well.

To make the whoopie pies:

Use an ice cream scoop and place on a parchment lined baking sheet. Leave at least 2 inches between because they spread! Bake in a 350 degree oven for 10-13 minutes or until light golden brown. Once they have cooked allow them to cool completely.

Strawberry Mallo Creme


1 cup vegetable shortening

1 cup powdered sugar

1 1/2 cup marshmallow cream

2 tsp vanilla paste

1/2 cup strawberry jam

4 drops pink food coloring

In a large bowl beat the ingredients together. Use a piping bag or Ziploc to decorate the whoopie pies! Decorate!
