Yummy SPAM Balls

Ingredients:

1 (12 ounce) can SPAM Classic, diced small

3 tablespoons onion, diced small

3 tablespoons sweet pickle relish

2 tablespoons "tamed" jalapeno peppers, diced

1 tablespoon Worcestershire sauce

1/2 cup crushed pineapple, drained

1 teaspoon garlic powder

1 teaspoon onion powder

2 eggs

2 cups bread crumbs, divided

2 egg whites

Directions:

Mix together diced SPAM, onion, pickle relish, peppers, Worcestershire sauce, pineapple, garlic and onion powder in large mixing bowl, mix well. Add 2 eggs and 1/2 cup bread crumbs and mix well. Chill mixture at least 1 hour or overnight. When chilled beat egg whites until foamy. Make small balls out of SPAM mixture and roll balls in foamy egg whites and then roll in remaining bread crumbs (may dip balls with cookie scoop). Line cookie sheet with foil and spray with non-stick cooking spray. Lay SPAM balls at least 1/2-inch apart. Bake in a preheated 375 degree F oven for 22 to 25 minutes or until lightly browned. Serve warm or cold.
