Ingredients
2 cups Orrachetti (cooked and rinsed in cold water)
1/2 Lemon (sliced thin and diced skin and all)
2 Tbsp olive oil
4 oz Sherry vinegar
1 bunch Green Onions 9chopped to about 1/4")
2 Tbsp Parsley, chopped
1 Red Pepper (chopped to about 1/4")
2 Tbsp Basil, chopped
1/4 cup Sun Dried Tomatoes, diced
4 oz Goat Cheese
1 Jalapeno, diced
Salt and pepper
1/4 cup Bread Crumbs
1/2 cup Water
Directions
1. Heat a 12" Sauté pan and add the olive oil.
2. Once the oil is very hot, add all of the raw vegetables and lemon.
3. Sauté until about cooked through.
4. Deglaze with 4 ounces of the vinegar and cook until reduced by half.
5. Add the herbs and Goat Cheese.
6. When the cheese is melted, add the pasta and a half cup of water.
7. Once this is heated through, plate the pasta and sprinkle bread crumbs on top.
