Quick Red Beans and Rice


4 slices bacon, chopped

1 (16 ounce) smoked andouille sausage, sliced

2 bell peppers, chopped

1 1/2 cups chopped yellow onion

1/2 cup celery, chopped

4 cloves garlic, minced

1 teaspoon Cajun seasoning

4 cups chicken stock

1 (16 ounce) package dried small red beans

4 cups rice, cooked (white/brown)


In a pressure cooker over medium heat, sauté bacon until crisp. Add in sausage, onions, celery, garlic and Cajun seasoning. Cook until onion is translucent. Stir in broth, beans and bay leaves. Place lid on cooker. Bring to full pressure and then reduce heat but maintaining pressure. Cook at high pressure for 10 minutes. Reduce pressure and then serve over rice.
