Ingredients:
cooking spray
1lb lean ground beef 4% fat
1 teaspoon crushed garlic (in jar)
½ cup onion diced
1 cup green bell peppers diced
1½ cups tomatoes diced
1 cup frozen corn kernels
1 tablespoon granulated beef bouillon (low sodium)
1½ teaspoons ground paprika
1½ teaspoons ground cumin
¼ teaspoon ground chili powder
4 tablespoons no-salt-added tomato paste
1 x 16oz can chili beans
1 x 10¾oz can tomato soup (Healthy Request Campbell's®)
1 cup water
pepper
Cooking Instructions:
Coat a non-stick frypan with cooking spray and brown ground beef with garlic for 3 minutes. Add onion, bell peppers, tomatoes and corn and cook until beef and vegetables are cooked through. Add the bouillon, paprika, cumin, chili powder, tomato paste and chili beans and combine. Finally add canned soup and water and bring to boil. Add pepper to taste. Reduce heat and slow boil for 3 minutes then serve.
Variation
Replace beef with extra lean 99% fat-free ground turkey.
Dietitian's tip
Adding beans means more fiber, which is ideal for general health and wellbeing.
Suitable to be frozen.
