Miso-sake Glazed Shrimp

INGREDIENTS:

24 shrimp, peeled and de-veined

½ cup Sake

½ cup Miso paste

¼ cup Brown Sugar

1 tsp Ginger, minced

8 Bamboo skewers

A/N Green onion, fine bias cut

A/N Sesame seeds

PROCEDURE:

1) Combine sake, miso, brown sugar and ginger in a bowl and mix well.

2) Add shrimp and allow them to marinate for at least 1 hour no more than 12 hours.

3) Skewer three shrimp on each skewer, passing through both the body and tail.

4) Place on a pre-heated grill and brush with the remaining glaze.

5) Cook the skewers for about 3 to 5 minutes then turn them over and baste again, cook for 3 to 5 more minutes and remove them from the grill.

6) Garnish with green onions and sesame seeds.

Directions:

1. Tenderize steak and season with salt and pepper.

2. Coat well with garlic, Italian parsley, green onions and Parmesan Reggiano cheese.

3. Roll the round steak tightly and tie with butcher's twine.

4. Heat oil in skillet

5. Brown steak on all sides

6. Heat 3 cups marinara sauce in sauce pan.

7. Transfer steak to marinara sauce for 1 hour, covered.

8. Prepare pasta to al dente.

9. Plate pasta.

10. Transfer steak to cutting board, slice ½ inch thick

11. Place steak on the side of the pasta.

12. Drizzle marinara over the top of the steak and the pasta.

13. Sprinkle with Parmesan Reggiano.

METHOD OF PREPARATION:

Heat pan and add oil. Place dredge scallops in pan then turn and place on plate. Remove oil and add whole butter, onion, garlic then add sherry, cream and cheese. Finish with parsley and lemon zest.
