Veal Marsala

You'll feel like you're at a restaurant, but without the wait or the price. You can dish it up pretty quickly and with a little bit of wine.

Ingredients:

Demi-glaze 4oz
Shallots minced 2oz
Migonette 1
Marsala Wine 2oz
Mushrooms-sliced 2oz
Veal 4oz pounded 2pc
Flour for dredging 2oz
Salt TT
Pepper TT

Directions:

1. Pound out veal and set aside. In a hot pan, place dredged veal and sear both sides.

2. Season with salt and pepper, shallots and mushrooms.

3. Flame with marsala and add mignonette and finish with demi-glaze.
