INGREDIENTS:
1-6oz lobster tail cooked
2-green asparagus spears, blanched
1-white asparagus spear, blanched
5 oz fresh steamed spinach
1/2 navel orange segments
2-grape tomatoes quartered
6-caper berries sautéed
1 oz finely diced re onion
3 oz balsamic vinegrette dressing on the side.
DIRECTIONS:
1. Place skewer in lobster tail to keep straight and place lobster tail in boiling water for about 10 min.
2. Chill lobster tail and peel it.
2. Assemble plate.
