Buttermilk Biscuits

Buttermilk Biscuits are some good ole fashioned home cooking and are delicious with gravy. Platt College gives a simply recipe to make them.

INGREDIENTS:
2 cups All purpose flour
1 tsp Iodized salt
2 tsp Granulated sugar
2 tsp Baking powder
1/4 tsp Baking soda
4 oz Unsalted butter, cut into small pieces
Buttermilk

DIRECTIONS:
1. Pre-heat oven to 450 degrees. (If you are using a convection oven, reduce the temperature to 425 degrees and eliminate step 2).
2. If you are using a conventional oven, place an empty sheet pan on the bottom rack of the oven to use as a diffuser, which will keep the bottoms of the biscuits from over browning.
3. Exactly measure all dry ingredients (1-4) into a small mixing bowl, and stir together until evenly incorporated.
4. Add the dry ingredients to the Robo-Coupe (food processor) fitted with the blade.
5. Add the cold butter pieces to the dry ingredients in the Robo-Coupe and pulse until the butter is the size of peas.
6. Quickly add the buttermilk while pulsing the Robo-Coupe in short bursts. Pulse until ingredients begin to form into a dough (5-6 times). It is OK if the flour is not fully incorporated into the dough. Do not over mix the ingredients or you will begin to develop the gluten in the flour, which will produce tough, hard biscuits.
7. Turn dough out onto a well-floured surface and turn 2-3 times until mixture is a soft dough.
8. Roll dough out into a 1 inch thickness and cut out biscuits using a floured biscuit cutter. Be sure not to twist the cutter while cutting out or this will malform the sides of the biscuits.
9. When rolling out the dough again to cut more biscuits, be careful not to overwork the dough or the warning in step number 4 will occur.
10. Immediately place the biscuits on an un-greased sheet pan lined with parchment paper, and place on the center rack of the pre-heated oven and bake until the tops of the biscuits are golden brown. (12-15 minutes). It is not necessary to brush the tops with milk or butter, but you may brush the tops with butter after removing from the oven. Doing so will soften the tops of the biscuits and eliminate the crispness of the outer crust.
11. Remove biscuits from the oven and allow to cool for several minutes before serving
