Gnocchi (Potato Dumplings) in Roasted Red Pepper Cream Sauce

Ingredients

1 package 18 oz gnocchi

1 cup roasted red pepper, canned

2 cups cream

1/2 cup grated Parmesan cheese

black pepper to taste

Cooking Instructions

Cook gnocchi according to directions, drain and set aside.

In a blender, add the cup of drained roasted red peppers and blend until smooth.

In a saute' pan, bring the cream to a boil, add red pepper and Parmesan cheese and bring back to a boil.

As the sauce thickens, add the gnocchi and serve immediately.
