INGREDIENTS:
1 cup Bulgar Wheat
1 ½ ts salt
1 ½ cups water
1/3 cup olive oil
1/3 cup lemon juice
1 medium red onion, diced
1 large tomato, diced
1 cucumber, diced
3 cups parsley, chopped
Ground black pepper to taste
DIRECTIONS:
1) Bring 1 ½ cups of water to a boil.
2) Mix the Bulgar Wheat and salt in a large bowl. Add the boiling water to the wheat and let sit for about 30 minutes .
3) While wheat is soaking, dice all the vegetables to very small pieces.
4) When wheat is ready, add olive oil and lemon juice.
5) Refrigerate the wheat until just before ready to serve, add all the vegetables and parsley and mix well. Add black pepper to taste.
Tabouli can be a salad or serve it with other side dishes of your choice.
