Summer Vegetable Caesar Pasta Salad

Description

This delicious pasta salad is a quick and satisfying flavor pop of summery vegetables, tossed with a tasty blend of Asiago cheese and Panera Caesar Dressing


Ingredients

  • 8 oz. whole wheat bow tie pasta
  • 1/2 cup grated Asiago cheese, extra for garnish
  • 1/2 cup Panera® Caesar Dressing
  • 3 cups diced yellow squash and zucchini, mixed
  • 2 packed cups fresh baby spinach
  • 16 oz. package grape tomatoes, halved
  • 1/2 lemon
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Step 1: Cook pasta according to package directions and drain.
  2. Step 2: In large bowl, toss pasta with cheese and 1/4 cup dressing. Add squash, spinach and tomatoes and gently toss to combine
  3. Step 3: Using fine grater or microplane, zest lemon-half and squeeze juice over salad, and toss. Add salt and pepper to taste.
  4. Step 4: Chill for at least 30 minutes or until ready to serve. Before serving, toss with remaining 1/4 cup dressing. Don't have any Asiago cheese? Grated Parmesan is a fine substitute
