Ingredients

  • 4 cups chicken broth
  • 1 smoked sausage, cut into 1 inch pieces
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 2 cups fresh greens or kale, roughly chopped
  • 2 ribs celery, diced
  • 1 teaspoon garlic seasoning
  • 1 teaspoon cajun seasonings
  • 1 tablespoon flour
  • 2 cups frozen black eyed peas

Instructions

  1. Prep: In a stock pot, drizzle a little olive oil in the bottom of the pan and sauté the green pepper, onions, celery, garlic powder and smoked sausage.
  2. Combine: Cook until sausage is browned.
  3. Mix: Sprinkle flour into the pan and stir for one minute.
  4. Mix: Add in the chicken broth and bring to a simmer.
  5. Combine: Stir in the black eyed peas.
  6. Cook: Cover and cook for 30 minutes over medium-low heat.
