INGREDIENTS:
12 oz Pastry Flour
2 oz Sugar
6 oz Butter (very cold and cut into small cubes.)
1oz egg Yolks
3 oz very cold water
5/8 teaspoon salt

DIRECTIONS:
1) Sift the flour and sugar into a mixing bowl.
2) Add the butter and coat with flour, break up pieces with fingers. Rub together with both hands until it resembles a coarse corn meal. (Do not take any further.)
3) Beat the egg yolks, water and salt until dissolved.
4) Make a well in the center and add liquid, start to bring in your dry mixture while turning your bowl. Mix gently until completely absorbed.
5) Make a disk and place between two pieces of plastic and press down to form a disk. Chill in cooler for at least 4 hours (or can be made the day before).

Note: If making savory pies, quiches or tarts, omit the sugar.
