Ingredients:
4 medium boneless, skinless chicken breasts
2 tbsp Head Country Championship seasoning
1 tbsp garlic powder
1 tbsp Mrs. Dash Original Blend
1 cup Head Country BBQ sauce (or your favorite)
Garnish:
2 diced Roma tomatoes
6 diced green onions
2 cups Cheddar/Monterey Jack cheese (shredded)
Instructions:
1. Pour BBQ sauce into a bowl.
2. Season chicken with dry ingredients.
3. Grill over medium heat until well done.
4. Dip grilled chicken breasts into the bowl of BBQ sauce and put back on the grill to quickly sear.
5. After searing one side (approx. 1 minute), turn over and top with cheese.
6. Let cheese soften for approximately 1 minute and put garnish on top.
HINT: Serve with grilled ears of corn or your favorite vegetable kabobs!
